Recipe, my first original

6 Apple Muffins

1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/3 teaspoon salt
1/4 teaspoon nutmeg
1 large egg*
1/3 cup vegetable oil
1/2 teaspoon vanilla extract
1/3 cup brown sugar
1/4 cup granulated sugar
1 large apple, peeled and chopped medium fine (if your apple is fresh, add 1-2 teaspoons water, apple juice or apple cider to the mixture)

Preheat oven to 325 degrees. In a small bowl, whisk or sift together flour, baking soda, cinnamon, salt and nutmeg. Separately, in a medium bowl, blend egg, oil, vanilla, brown sugar and granulated sugar. Add flour mixture slowly, about 1/4 at a time until blended. The dough may be dry at this time. Peel and chop one large apple medium fine, add blend into dough. If dough is dry at this stage, add 1-2 teaspoons water, juice or apple cider. Fill muffin cups about 80% full. Bake at 325 degrees for 20-30 minutes until a knife or toothpick poked into the muffin comes out clean. Allow muffins to cool 10-20 minutes before removing them from the baking pan.


*For vegan apple muffins substitute 1/4 cup applesauce and 1/3 tsp baking soda
